When you complete a Collection for the first time, all your stickers will be converted into stars for the Star Bank. After that, you can complete the Collection again to receive even more rewards.

Please note: if the last sticker needed to complete the Collection drops from a new sticker pack, the remaining stickers from that pack will not disappear—they will count toward completing the Collection again.
